2 cups plain flour
2 1/2 teaspoons baking powder
1/4 tsp salt
4 large eggs
1 1/2 cups caster / superfine sugar
115g / 1/2 cup unsalted butter
1 cup milk
3 Tbs vanilla extract
3 Tbs vegetable or canola oil
Method
Heat oven on half fan bake 180 degrees.
Prepare the cake tin/tins by lining with a circle of baking paper.
Prepare the flour, salt and baking powder in a bowl, stir altogether to mix the baking powder through the flour.
In another bowl add the 4 eggs and beat for 5 mins - until tripled in size and fluffy.
Slowly pour in the sugar and beat continuously for another 2 mins, it will be light and creamy and stiff.
Melt the butter in a jug, add the milk, oil and vanilla to this jug.(The Butter can be warm)
In three batches add the flour mixture and the butter milk mixture to the egg and sugar and mix until just combined.
Bang out the bubbles.
Pour into the cake tin/tins.
Bang out the bubbles again and then put in the oven for 30 mins for two cake tins or 50 mins for one cake tin.
