Serves 4
Ingredients:
2 red onions
3 large carrots
4 garlic cloves
750g baby potatoes
6 sausages
1-2 tbsps extra virgin olive oil
1 tsp thyme
Salt and pepper to taste
Maple mustard glaze: 50g maple syrup + 50g wholegrain mustard
Gravy to serve
Method:
Peel the garlic cloves and crush them, cut the onions into quarters, slice the carrots and cut the potatoes in half (or thirds depending on size). Then add them along with the sausages to an oven proof dish and coat well in olive oil. Season with thyme, salt and pepper. Bake at 200 C for 30 minutes, then remove from the oven and pour over the maple mustard glaze. Return to the oven for a final 15 minutes, then serve with your favourite gravy.
