Serves: 2

 

Ingredients:

5 eggs

1 pepper (or chop a bit of all three)

4 button mushrooms

2 chopped tomatoes

3 slices chopped ham/chicken/salami

Grated cheese

Salt and Pepper

 

Method:

Whisk together the eggs with a good pinch of salt and pepper. Heat some olive oil in a frying pan and add all the other ingredients (except the cheese). Simmer together until they are starting to get some colour and you can smell the peppers. Add the eggs and let them slowly cook until you can start folding them over then add the grated cheese and give it all a good scramble!

 

Serve hot. Great for breakfast or lunch with toast or just on its own! Would also recommend after a night out…
