Ingredients:
1 onion
2 cloves garlic
5 button mushrooms
4 chicken drumsticks
Splash of balsamic vinegar
½ cup BBQ sauce
¼ cup tomato paste
Oxo cube
1 cup water
4 chicken drumsticks
Rice
Broccoli (or something green!)
Method:
Finely chop the onion and garlic and heat with a tablespoon of olive oil in a large pot. Slice the mushrooms and add to the pot until they’ve reabsorbed the water. Add the drumsticks and a splash of balsamic vinegar and cook the chicken just until it starts to get a bit of colour on the sides. Then pour in the cup of water, BBQ sauce and tomato paste and add the oxo cube. You want the water to almost completely cover the chicken so add a bit more if necessary. Bring to the boil. Turn the heat down and let it simmer for 30 minutes while you cook the rice and the broccoli. The sauce should become a thick gravy. Serve the BBQ chicken over the rice and make sure to have plenty of the sauce (you’ll want more).
